Our Story

Tucked away in an intimate alleyway in Georgetown, Washington, DC, Two Nine is a modern expression of omakase, rooted in the elegance and seasonality of traditional Japanese kaiseki.

Led by Chef Zach Ramos, the experience reflects a thoughtful harmony between land and sea. Seasonal ingredients from local farms and producers are paired with exceptional seafood sourced from Toyosu Market in Japan, allowing each ingredient to be presented at its peak.

Chef Zach’s cooking also carries subtle influences from his Hawaiian heritage, bringing flavors and memories of the Pacific to the table. Through these touches, he shares the warmth and generosity of the aloha spirit, creating a dining experience that feels both personal and deeply connected to place.

Each course is composed with intention, allowing the menu to evolve naturally with the seasons. Guests are invited to leave behind the pace of everyday life, embrace the moment, and experience the connection between Japanese tradition, Mid-Atlantic ingredients, and the flavors of the Pacific.

A Taste of Japan, Inspired by the Pacific

Enjoy a curated selection of seafood sourced from Tokyo’s renowned Toyosu Fish Market, thoughtfully presented through our specialty chirashi sushi and temaki handrolls, wrapped in delicate seaweed from the Ariake coast of Japan.

Our menu extends beyond sushi, with comforting bowls of curry tonkotsu and Hawaiian-inspired poke, drawn from Chef Zach Ramos’ favorite poke shops and cherished flavors from Honolulu, Hawai‘i.

To finish, indulge in traditional Japanese sweets such as anmitsu and our delicate green tea pudding, paired with a cup of ceremonial-grade matcha.

At Two Nine, we celebrate the extraordinary diversity of Hokkaido sea urchin. Explore an exceptional range of Bafun, Murasaki, filtered ocean-water uni, and auction-grade selections from the prestigious Tachibana Company and Higashizawa.

Kaiseki + Omakase

A Kaiseki-inspired omakase led by Chef Zach Ramos, blending nearly 15 years of sushi craftsmanship with the subtle influence of Hawaii and the traditional techniques of Washoku.

The experience unfolds through seasonal Hassun, sashimi, house pickles, a warm dish, and an array of exceptional nigiri — from Otoro and Nodoguro to Awabi and Hokkaido Uni — with each course offering a new surprise.

Rooted in the flavors of the Pacific and guided by the spirit of omakase, the meal is a journey of discovery, craft, and seasonality. We conclude with hot tea and sweets curated by the Two Nine team.
